Mamas Chili or Taco topping

Ingredients
1 lb hamburger
1/2 onion
1 can black beans
1 can kidney beans
1 packet of chili seasoning
6 oz can tomato paste 
1/2 cup brown sugar
1 can of rotel (chili fixins')
1 can of diced tomatoes
Honey to taste

Instructions

Brown meat and add onions
Drain then add all other ingredients into pan and simmer for 30 mins to an hour! 

So delicious and can be added to taco shells or Indian fry bread 

(Easy version is to roll out biscuits and deep fry)

Creamy Italian Baked Penne

1 lb Italian sausage
1/2 chopped onion
16 oz box of cooked Penne Noodles
10oz Philidalphia cooking cream(italian cheese & herb)
24 jar spaghetti sauce (Ragu super chunky mushroom)
2 cups shredded cheese
Real bacon bits

What to do:

Brown sausage in skillet add onions and cook until onions are translucent
Drain cooked penne
Preheat oven to 350
Add cooking cream and spaghetti sauce to sausage and onions and stir
Add 1 cup of cheese until melted
Place noodles in 8x13 baking dish
Pour meat mixture onto noodles and add remaining cheese stir top with bacon bits and bake for 15 minutes at 350 degrees

Twice Baked Reds in 15 minutes

This is for twice baked potatoes and I happen to use Red potatoes and a little microwave short cut!

5 Red potatoes medium to large
4 Tbsp butter
1 cup sour cream
1 cup shredded cheese
3 Tbsp Parmesan cheese
1/2 cup milk
1 green onion chopped
3 Tbsp of real bacon bits

* Cut a slit on top of potatoes
* Microwave potatoes according to microwaves "potato" setting (aprox. 5 min)
* Slice each potato in half and place on a baking pan
* In a medium bowl mix the rest on the ingredients together
* Scoop out centers of potatoes and add to filling and mix well
* Place filling back into potatoes pile them high the mixture will become solid
* Bake at 400 degrees for 10-15 minutes
* Top with bacon, parmesan, shredded cheese and or green onions (optional)


These are super easy and oh so delicious any time of year!

Mexican Chilada Casserole

This a delicious recipe to make when you have leftover taco meat. I just created this for lunch.

2 cups leftover taco meat
1 can black beans
1 box of Rice a roni Mexican Style
8 oz tomato sauce
5 oz cream cheese
1/2 cup shredded cheese
1 box of cornbread mix

Directions:

* Mix first four ingredients together while heating cream cheese in microwave for 1 minute

* Add cream cheese to other ingredients and place into a 9x13 baking dish

* Top with shredded cheese
Mix cornbread mix according to the package and pour over top

* Bake @ 375 for 25 minutes or until rice is done, cornbread is golden brown and enjoy!

Grilled Cheese Dog

You will need the following:

2 slices of bread
Slice of cheese
Hotdog

Once you have buttered your bread, throw it on the grill. Place the cheese and hotdog (sliced lengthwise) onto bread. Grill until all cheese is melted and hotdog is cooked.

Chocolaty & Peanut Butter Oatmeal

This was named by my 3 year old. Who says it is good!

All you do is add:

* Nestle chocolate powder & a spoon full of peanut butter, stir and serve!

Tip: You can make single servings of oatmeal ready to use. All you need are the snack size ziplocks and your favorite dehydrated toppings. Place them in the bags together to create all different flavors. I then place several  smaller bags into a freezer bag and pop them in the deep freeze. Don't forget to make labels! I will get pictures one of these days too.

Delicious Peanut Chicken

What you need:
1/4 cup of Coconut milk (silk half gallon is what I used)
2 Tbsp of JIFF Natural peanut butter
2 chicken breasts marinated in Teriyaki sauce (we use Veri Veri Teriyaki)  

What to do:
Cook the chicken until no longer pink
place coconut milk and peanut butter into pan simmer for 5 minutes
Serve! 
You can easily add more chicken and more sauce to your liking

Homemade vegetable juice

I have been supplementing my diet with fresh vegetable juice made from our juicer.

Delicious Green  Carrot Juice
2 leaves of kale
1 green delicious apple
3 carrots
2 stalks of celery
2 leaves of parsley

Some juice is better then others...I will keep you updated with the juice recipes I create that are good and tolerable. Thank you for reading my blog.

Homemade Toasted Ravioli

We love Toasted Ravioli in this family and until tonight we just bought the overly priced box in the frozen food section. Here you have it folks easy AND cheap Toasted Ravioli



You will need the following:
  • 24 Frozen Ravioli (Great Value) 
  • 2 cups of Bread Crumbs (I made my own with frozen bread ends & a blender)
  • 3 eggs 
  • baking sheet  
  • butter (stick butter makes coating the pan easier)



What you will do:

  1. Preheat oven to 375 degrees 
  2.  Place egg mixture & bread crumbs into separate containers (I used Tupperware containers)
  3.  Place frozen ravioli into egg,  then dip into bread crumbs, cover evenly with crumbs
  4. Spread butter onto baking sheet then place the breaded ravioli onto pan
  5. Bake for 6 mins then turn them over and bake an additional 7 mins

Dry Pancake Mix

Dry Ingredients:
  • 2 cups dry buttermilk powder
  • 8 cups all-purpose flour
  • ½ cups sugar
  • 8 tsp baking powder
  • 4 tsp baking soda
  • 2 tsp salt
Mix all ingredients together and pour into an airtight container. Store in a cool,dry place. Keeps for  6 months.
When you are ready to cook your pancakes using the mix, also use the recipe below.
Recipe:
  • 1 ½ cup pancake mix
  • 1 egg
  • 2 tbsp oil
  • 1 cup water
Mix all ingredients. Makes about 10-4”pancakes.
*Tip: You can add fresh blueberries, chocolate chips, bananas, pecans, or anything you like to these
pancakes for a delicious breakfast.

Pita Pizza

These are really great for the kiddos, or busy parents.

You will need to set your oven to 350 degrees.
- A bag of Pita Bread
- Pizza Sauce
- Toppings (we used mini pepperoni,turkey,cheese)
- Garlic Salt

Now you just take the pita cover with sauce, cheese & desired toppings. Then place it into the oven until the cheese is melted. (5-7mins)

Ramen Noodle Stir-Fry

This is a very easy and delicious family friendly meal. Serves 3-4

You will need the following ingredients:
3 Packages of Ramen Noodles Beef flavor
2 tsp. soy sauce
16oz Stir-fry vegtables
2 cups of water

Throw all the ingredients into a large skillet including seasoning packets that come with the noodles.
Cover and simmer on medium-high for 7 minutes, uncover, stir and cook for an aditional 3 minutes.




I was so busy throwing this together and writing down the recipe I forgot to take pictures.

Easy BLT Potato Salad

This would be a wonderful dish to have for a cookout. I used the Redskin potato salad from walmart because it is really creamy. This is what you will need.

1 tub of Potato Salad (Redskin)
Salt to taste
1 1/2 cups of cheese 
1 cup of cooked bacon (I took off the fat)

Put it into a nice dish and mix all ingredients together. Now you have a wonderful delicious and easy side dish!

Crunchy Breakfast Sandwich


All you do for this one is take Corn flakes or in my case I used Original Special K cereal.You just dip the out sides in egg and cereal then put your favorites on it. I put ham, cheese, marmalade. Easy! Well I hope you enjoy your breakfast! Have a great day and may God Bless.

Scrambled Eggs with...

...Mushrooms,Cheese & Spinach

Ingredients:
5 eggs
1/8 cup evaporated milk
1/8 cup shredded cheese
1/2 cup mushrooms
1/2 fresh spinach leafs
dash of garlic salt

Set stove to medium heat, coat pan with butter, mix all ingredients together in a bowl
Cook until eggs are no longer runny
Top with more cheese


"These are the best eggs I have had in forever"-Compliment by my husband.

I do not normally like scrambled eggs, These were really good.
